I had been thinking about making some nice mini pies and was inspired when I went to Asda; I cheated this weekend and used their Apple Compote and crème pâtissière to fill them. I’m sure you could easily fill the middles with your own mixture. I felt the crème pâtissière added something to pie and is tastes extra nice when they’re still warm from the oven. I cut out little hearts with a cutter and pasted them on the tops of the pies with egg. I then dusted mine with cinnamon sugar and a little nutmeg. I’d recommend using a mini sieve to do this.
I once again made savoury muffins. I like to change and improve with every batch! This time I made them “naked” (no bun cases!) and tried out two different muffin pans: one silicon and one Pyrex brand non-stick metal. Both produced the same result and neither of them stuck! I think they were a lot better as slightly bigger muffins too. The deeper holes meant I could put a little more in them. I also sprinkled some cheese on the tops of the muffins after brushing them with egg.
